5 course dinner:

  • 1. Endives, artichoke and crème fraiche dip, blackberry, pecans, and white truffle oil
  • 2. Spiced butternut squash soup, brûléed butternut and dates
  • 3. Citrus glazed chicken, lightly grilled chard, shitake boiled in soy sauce
  • 4. Smoked pork loin, cinnamon butter poached carrot, warm blackberry and butter vinaigrette
  • 5. Avocado mousse, soursop ice, and candied chilies

  • 1. Red Snapper with Turmeric Cream and Seaweed Oil
  • 2. Bok Choy with Pepper Jam, Walnut Praline, and Iberico Ham
